If there is one vegetable that stands out among the rest as a multipurpose favorite, the credit would have go to the tomato. The tomato can be eaten raw in salads and sandwiches, cooked into sauces and casseroles, or enjoyed as a juice. It has also been shown to be beneficial when applied externally to the skin as well.

Tomatoes are packed with vitamin C and they contain lycopene, which is an antioxidant. Lycopene helps protect the eyes and cardiovascular system by reducing blood clot formation in the blood vessels and lycopene reduces the risk of prostate cancer. Other micro nutrients in the tomato help regulate the blood sugar to lower the chances of developing diabetes. These nutrients can only be attained from fresh tomatoes and fresh tomato juice. The longer the juice sits on the shelf as in a can of processed tomato juice, the more they deteriorate. This doesn’t even take into account the processing itself which may have already destroyed many of the valuable beneficial nutrients.

Tomatoes have been shown to an aid in the relief of joint pain. This may be due to the right balance of vitamins and minerals in the tomato. To achieve this valued pain relief it would be necessary to eat a large bowlful of tomatoes, but the same results can be gotten a little easier by drinking about three glasses of freshly prepared tomato juice each day. You should feel some relief within about ten to fourteen days. Even adding two glasses of tomato juice to the bath water and soaking in this for ten minutes each day can be of benefit as well.

One large tomato, one stalk of celery, one small cucumber, two broccoli crowns, and two sprigs of parsley.

Three medium tomatoes, one celery stalk, one cucumber, one red pepper, one small onion and a pinch of salt and pepper, also a pinch of basil and oregano to compliment the taste tomatoes.

Another variation of the above recipes is to try three tomatoes, one celery stalk, one red pepper, one apple, one clove of garlic, one small onion, salt and pepper to taste and a dash of hot sauce.

If you just want the recipe for most vegetable juices like the popular V8 juice cocktail which has been copied by other juice makers, then use the following recipe, only this time it will unprocessed and not several months old, containing all the vitamins, minerals and micro nutirents as it should. Plus you can customize it to your own taste with spices, sauces and other vegetables.

Start with three large tomatoes, half a dozen carrots, three stalks of celery, one red pepper or one green pepper which will produce a less sweet juice, one small beet, one small bunch of spinach, well washed to get out all the grit, otherwise you will ruin the juice, one really small cabbage or about a quarter of a head of a large one, and a small onion or a piece of a larger one. Once juiced add salt or sea salt and pepper or cayenne pepper to taste.
